Amber
If there was ever a restaurant that encompasses all that is great about Scottish cuisine, Amber is it. Located above The Scotch Whisky Heritage Centre, they treat Scotland's mountains, glens, rivers and seas as their larder and they're as serious about their whisky as they are about their food. With a resident whisky expert on hand and 280 varieties of the amber liquor on offer, there's a fantastic dedication to the stuff, but thankfully not everything on the menu is drowned in it –they're far too good at cooking to rely on that cheeky trick. With separate lunch, dinner and Sunday menus, there just isn't any reason why you shouldn't eat here at least three times a week. Ok, maybe cash might be an issue.
